  • Time for cooking: 2 h
  • Ingredients:
  • Sugar: 1 glass
  • White vinegar: 8 tablespoon
  • Water: half of a glass
  • Sesame: 1 tablespoon
  • Dried damask rose: 1 tablespoon
  • Dried lime: 1 tablespoon
  • Coconut powder: 1 tablespoon
  • Saffron: half of a teaspoon

First, you should beat the saffron well and add 3 spoons of boiling water to it. Then, place the lid on it to brew.

Now, pour water into a small pot or boiling milk to boil, then reduce the heat and add sugar, vinegar, and brewed saffron to the boiling water.

It doesn’t need to stir the ingredients; you can shake the pot and let the sugar get solved in the water.

You should put the mixture of sugar, vinegar, and water for 15 to 20 min on the gas stove with a gentle flame so that the sugar gets firm.

After the ingredients get thickened, you should decide about the taste of it. So, in this step add anything that you like (sesame, dried damask rose, dried lime, coconut powder, etc.).

Shake the put, so that the ingredients get mixed. Let the ingredients boil for 5 min. when your mixture turns to a caramel color, it’s probably ready.

If you want to be sure that it’s ready, put the ingredients on some ice.

If Its ingredients are hard and crunchy on the ice, so it’s ready.

If Pooleki is soft, boil it for extra minutes to get crispy and fragile.

Cover the Poolaki on the tray with foil.

Take some part of Pooleki with a spoon and pour them on the foil-like circle and little coins.

Pay attention that if you boil the ingredients enough, the ingredients on the foil won’t get spread.

If you notice that it gets spread, it’s better to put it for some extra minutes on the gas stove and boil it to reach a proper density.

When you pour them on the foil, pay attention that they won’t be thick so that you have thinner Poolaki. If you like, you can add some sesame to the Poolaki to have a better appearance.

After pouring all the ingredients into the tray, you should wait for some hours until they get dry. Then, you can separate them from the foil and put them in a proper dish.
